各レストランの調理部門において、料理長の補佐として厨房運営全般をご担当いただきます。

·  日本料理
·  中国料理
·  西洋料理
·  オールデーダイニング
·  宴会
·  担当部門における調理業務および品質管理
·  キッチンオペレーションの管理・改善
·  食材の発注・在庫管理・原価管理
·  メニュー開発および季節メニューの提案
·  衛生・安全管理(HACCP)の徹底
·  スタッフの指導・育成・シフト管理
·  サービス部門・宴会部門との連携
·  ブランドスタンダードに基づいた料理提供

 

·  Oversee food preparation and maintain quality standards within the assigned section
·  Manage and improve kitchen operations and workflow
·  Handle ordering, inventory control, and cost management of ingredients
·  Support menu development and propose seasonal offerings
·  Ensure strict compliance with hygiene and safety standards (HACCP)
·  Supervise, train, and schedule kitchen staff
·  Collaborate with service and banquet departments
·  Ensure all dishes are prepared and presented in line with brand standards

<必須>

·  高卒以上
·  調理経験(目安5年以上)
·  リーダーまたはマネジメント経験
·  衛生管理に関する基本的な知識
·  ホテルまたはレストランでの勤務経験
·  副料理長またはChef de Partie以上の経験
·  原価管理・メニュー開発の経験
·  HACCPの知識・実務経験
·  チームをリードし、現場をまとめられる方

 

·  High school diploma or equivalent
·  Experience in bakery or culinary operations
·  Strong interest in bread making and bakery products
·  Ability to work well in a team environment 
·  Attention to detail and ability to work with care and precision 
·  Strong awareness of hygiene and sanitation standards 
·  Availability to work shifts, including early morning hours
