Job Description
We are seeking a highly organized and efficient Chief Steward to join our team in Phu Quoc, Vietnam. As the Chief Steward, you will play a crucial role in managing daily kitchen utility operations and staff, ensuring the highest standards of cleanliness and hygiene in our culinary and F&B operations.
· Lead and supervise the stewarding team across all shifts, maintaining consistent cleanliness and hygiene standards in kitchen and dishwashing areas
· Implement and monitor sanitation and hygiene protocols in compliance with HACCP and local Vietnamese health regulations
· Oversee proper handling, cleaning, and storage of kitchen equipment, utensils, and dishware
· Manage inventory control of cleaning supplies, chemicals, kitchen operating equipment (KOE), and dishwashing materials
· Coordinate waste disposal and recycling programs with Engineering and Housekeeping departments
· Collaborate with Culinary and F&B teams to support banquet setup, outlet operations, and special events
· Ensure regular maintenance and servicing of stewarding equipment and machines
· Prepare departmental reports, cleaning schedules, and maintenance logs
· Recruit, train, schedule, and evaluate performance of stewarding staff
· Enforce safety standards and proper use of personal protective equipment (PPE) in all stewarding tasks
· Optimize operational efficiency and cost-effectiveness within the stewarding department
Qualifications
· 3-5 years of experience in stewarding, with at least 1-2 years in a supervisory or chief stewarding role
· Strong leadership and team management skills
· In-depth knowledge of hygiene, safety, and chemical handling procedures
· Excellent organizational, time management, and communication skills
· Proficiency in HACCP principles and familiarity with local Vietnamese food safety regulations
· Experience with inventory management systems and cost control measures
· Ability to work effectively in a fast-paced, high-pressure environment
· Physical stamina to handle long hours on feet and occasional heavy lifting
· Strong problem-solving skills and attention to detail
· Fluency in English; knowledge of Vietnamese is a plus
· Experience in pre-opening or large-scale banquet operations is highly advantageous
· Bachelor's degree in Hospitality Management or related field preferred, but not required with equivalent experience
