Cost Controller
We are looking to hire a Cost Controller with experience in operational cost control, particularly in the Food & Beverage areas. This role will work closely with the Kitchen, Purchasing, and Operations teams to ensure profitability and economic control across the hotel's outlets and events.
Responsibilities: The selected candidate will be responsible for monitoring and analyzing food and beverage costs, including reviewing recipes, costing sheets, and technical specifications together with the Kitchen team. They will perform economic analysis of events such as banquets, cocktails, coffee breaks, and open bars, ensuring accurate cost allocation and profitability for each service.
Key tasks include controlling beverage consumption, managing and supervising inventories, analyzing stock levels, rotations, and waste, as well as comparing theoretical versus actual consumption. The role also involves active participation in purchase analysis, monitoring price deviations, supplier and product comparisons, and supporting the definition of minimum stock levels.
Additionally, the candidate will prepare periodic reports on costs, margins, and variances for Management, collaborate in internal audits and the implementation of internal control procedures, and propose improvements aimed at cost optimization and operational efficiency.

Profile and Competencies: We are looking for someone with strong analytical skills, attention to detail, and an operational understanding of the business. The ideal candidate will be comfortable working cross-functionally with different departments, especially Kitchen and Purchasing, and possess excellent organizational, planning, and communication skills. A proactive attitude, ability to work with data and KPIs, and a focus on continuous improvement are highly valued.
Experience and Requirements:
· Previous experience of at least 2–3 years in similar roles as Cost Controller or F&B Controller, preferably in hotels, resorts, or restaurant chains.
· Practical experience in controlling kitchen and beverage costs, event and banquet analysis, inventory management, and stock control is essential.
· A degree in Business Administration, Finance, Hospitality, or similar is desirable.
· Advanced Excel skills and experience with hotel management systems or ERPs are required.
· Knowledge of international chain standards and experience in high-volume hotels or properties with multiple outlets will be considered a plus.
