Job Description

Reporting to the Director of Food & Beverage, responsibilities and essential job functions include but are not limited to the following:

·  Manage all aspects of Food and Beverage operations, ensuring compliance with Fairmont Hotel Standards and maintaining brand integrity
·  Oversee the successful set-up and facilitation of banqueting and catering events
·  Lead and develop the F&B team, fostering a culture of exceptional service and memorable dining experiences
·  Ensure financial targets are met by submitting accurate monthly outlooks, controlling payroll, and balancing quality with staffing demands
·  Maintain high-quality food products and service standards across all events and restaurants
·  Drive innovation in menus, promotions, and concepts to create a destination of choice for both hotel and external guests
·  Analyze F&B business trends and implement strategies to maximize margins and enhance revenues
·  Ensure compliance with all safety and sanitation policies in food and beverage handling
·  Collaborate with the Executive Chef to develop and implement new menu items and seasonal offerings
·  Manage inventory levels and coordinate with suppliers to ensure optimal stock levels and cost-effectiveness
·  Resolve guest complaints and concerns promptly and professionally, ensuring high levels of customer satisfaction
·  Conduct regular staff training sessions to enhance service skills and product knowledge
·  Participate in budget planning and forecasting for the F&B department
·  Ensure compliance with local liquor laws and regulations
·  Coordinate with other departments to support hotel-wide initiatives and event

 

Qualifications

·  Degree in Hotel/Restaurant Management or related discipline required
·  Previous Food & Beverage experience in a senior leadership role required
·  Experience working as a Food & Beverage / Restaurant Manager in a 4/ 5 Star Restaurant
·  Strong culinary and wine knowledge required
·  Sommelier designation an asset
·  Strong leadership skills for motivating and leading staff
·  Computer literate in Microsoft Window applications required
·  Proven record working with budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
·  Exceptional interpersonal, problem solving and guest relation skills
·  Proven team-builder with outstanding coaching skills
·  Clearly demonstrated ability to be innovative, creative and able to think outside the box
·  Previous experience working in a union environment
