Job description
You will be responsible for overseeing all cutting and preparation of meats, seafood and vegetables, ensuring precision and consistency in food quality. This role involves managing a team of kitchen associates, training them in Chinese cutting techniques, maintaining high hygiene and safety standards. The Sous Chef collaborates with the Chinese Chef De Cuisine to ensure efficient kitchen operations, proper ingredient handling and adherence to Hyatt's culinary excellence. Strong knife skills, knowledge of ingredient preparation and portioning and leadership abilities are essential for success in this role.
Desired profile
Qualifications :
• Certificate or Diploma in Culinary Arts.
• Knowledge of food safety and hygiene standards (eg: HACCP) or relevant certifications.
• 3 -5 years of experience in a professional Chinese kitchen with at least some time in luxury hotel or fine-dining setting.
• Expertise in Chinese cutting techniques including precise knife skills for meats, seafood and vegetables.
