About the Role

An exciting opportunity exists for a dynamic and passionate Head Chef to lead the culinary experience at Caption by Hyatt Sydney, the first of its kind in Australia. This role is pivotal in overseeing the pre-opening phase of the hotel — from setting up the kitchen, establishing menus, and building the team — through to leading daily culinary operations once the hotel opens.

You’ll be responsible for delivering an on-brand, flavour-forward experience that celebrates local produce, sustainability, and individuality. As a key leader of the hotel, you will ensure the culinary operation not only meets guest expectations, but also supports colleague engagement, drives revenue, and achieves strong financial performance.

Some Key Responsibilities

· Lead the day-to-day culinary operations with a hands-on, service-focused approach.
· Coach, develop, and mentor a high-performing kitchen team, fostering a culture of care, creativity, and continuous growth.
· Embody and promote Hyatt’s purpose of caring for people so they can be their best, while guiding the team to uphold Caption’s bold and inclusive brand values.
· Develop innovative, seasonal menus that reflect the Caption brand and local market, while keeping an eye on emerging culinary trends.
· Oversee food safety and OH&S compliance, maintaining the highest hygiene and kitchen safety standards.
· Collaborate closely with Sales, Marketing, and Front of House teams to create memorable dining moments that exceed guest expectations.
· Manage food and labour costs effectively, aligning with budgeted targets while maximising revenue opportunities.

Desired profile

Qualifications :

What you will bring to the role:

·  Proven experience as a Head Chef in a hotel setting; pre-opening experience highly regarded.
·  Certificate III in Commercial Cookery (or equivalent).
·  Exceptional leadership and communication skills with the ability to build strong, collaborative relationships across departments.
·  A passion for sustainability, with experience in ethically sourced ingredients and food waste reduction initiatives.
·  Creative flair and an openness to experimentation, balanced with a strong understanding of operational execution.
·  Proven ability to lead both the operational and administrative functions of a busy kitchen.
·  A guest- and colleague-focused mindset, with a drive to deliver excellence across financial, service, and engagement metrics.
