About the Role!

Reporting to the Director of Food and Beverage, the  Executive Chef , will take the lead of our culinary team, orchestrating exceptional dining experiences that embody creativity and excellence across varying dining outlets, Conference & Events, Executive Lounges and In-Room Dining.

In this pivotal role in the hotel operations, your main responsibilities will include: 

·  Creation of seasonal menus keeping up with the current trends of Melbourne.
·  Hands on day-to-day management of food service operations for the outlets, room service, Executive Lounge and banqueting.
·  Ongoing support and training with focus to upskill and develop our internal talent within the Kitchen department.
·  Ensure the highest standard of hygiene is practiced and maintained to meet Health & Safety regulations and HACCP food preparation guidelines.

Qualifications

We're seeking a creative, passionate and adaptable  Executive Chef  with a large operation experience that can take this landmark hotel to the next level in developing and establishing our internal Kitchen team and operations! 

About you! 

·  Experience in multiple F&B operation high performing hotel and large banqueting catering . 
·  Experience and passion in training and developing a kitchen team with a strong focus on career development and inspiring the next generation of Culinary champions . 
·  A strong passion in developing seasonal menu looking at the trends in food and creation that highlights not only in the outlets but in the Banqueting operation. 
·  A creative approach to the production and presentation of all things culinary (live outside the normal presentation and create a sparking moment in food). 
·  A strong passion for keeping up to date with culinary market trends with the desire to be the best in the business!
·  Facilitate and promote a collaborative interdepartmental work environment throughout the hotel.
·  Strong understanding of Financial of Kitchen operation (Food cost, Manning budget, monthly expenses).
