Job Description

·  This position is responsible for maintaining high standards of food preparation and service in the appointed kitchen(s), according to the standards set by Culinary Director
·  To ensure that all stocks are kept under optimum conditions and rotation is managed according to company standards
·  To ensure that all mise en place is always freshly prepared and on time.
·  To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
·  To ensure that all dishes reach the hot plate or passed correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
·  To ensure that junior cooks and trainees receive the right training and optimum guidance.
·  To ensure that any anticipated shortages are communicated promptly to the Demi Chefs, Chef de Parties and Sous Chefs.
·  Is aware of and adheres to all Pullman Maldives Maamutaa procedures for security measures, fire, health and safety.
·  Apply necessary precautions with regards to the resort food safety and hygiene standards (HACCP)

Qualifications

·  Diploma or equivalent qualifications
·  Minimum of 2 years of experience  in a luxury hotel or resort  
·  Additional certification(s) in Culinary will be an advantage
·  Oral proficiency in English language
·  Ability to focus attention on guest needs, remaining calm and courteous at all times
·  Ability to work well under pressure in a fast paced environment
·  Past experience of working in the Maldives will be an advantage
