Mantra Lorne is located in the coastal town along the Great Ocean Roan is spread across 12 acres of landscaped gardens, boasting undeniable beachfront accommodation offering heritage hotel rooms and modern one and two bedroom apartments. The Larder, on-site restaurant, offers daily breakfast, lunch, and dinner, all crafted from locally sourced ingredients.
Proudly housing the largest residential conference venue in regional Victoria, Mantra Lorne can host groups of up to 600 guests for bespoke corporate and private events.

Purpose
As our Chef Tournant, you will be a vital member of our culinary team, where the kitchen becomes your creative space, and flavours come alive on each plate. Bring your passion and imagination, and as a team create dishes that leave wonderful memories.
Primary Responsibilities
· Take charge of your designated kitchen area to ensure smooth service delivery, ready to assist other sections when required
· Bring a touch of creativity and passion to your work, setting a positive tone for your kitchen colleagues
· Stay diligent in adhering to local regulations related to health, safety, and compliance, with a solid grasp of HACCP management
· Ensure accuracy, consistency, and efficiency in preparing food orders and menu items
· Handle a range of kitchen tasks, from dishwashing to crafting delectable dishes
· Foster a collaborative approach between the front-of-house team and the kitchen brigade for a harmonious work environment
Skills & Experience
· Minimum educational requirement: Certificate 3 in Commercial Cookery
· Proficiency in independent work and a proactive attitude within a dynamic setting
· Demonstrated capability to excel in a fast-paced, high-pressure team environment
· Adaptable to work in different kitchen sections, and be able to grasp techniques and responsibilities
· Flexible availability to accommodate various shifts, including mornings, late evenings, weekends, and public holidays as required
