Chef de Partie (Full Time) | Mercure Gold Coast Resort

A 292-room hotel, spanning over 3.5 hectares of manicured gardens with significant food & beverage operations, two resort pools and extensive conference facilities, Mercure Gold Coast Resort is an oasis located amongst expansive gardens on the Gold Coast.

Overlooking the Resort’s pool and ninth Hole of the Palm Meadows Golf Course, ‘The Green Dining’ welcomes our guests.  A blend of internal and unique outdoor conference spaces the Resort is limited only by our guest’s imagination.

Working with the kitchen leadership team, this amazing opportunity would see you predominantly working in a la carte service. You will ensure that this meal period is to standard, being creative and responsive to changes in seasons, guest preferences and updating menu items regularly

Job Description

WHAT YOU WILL BE DOING:

·  Work collaboratively with the Executive Chef and Sous Chef to assist with general tasks such as ordering, timesheet approvals (within Award provisions) and representing the Kitchen team at Resort meetings.
·  Ensure that service runs smoothly as the senior chef in absence of the Sous Chef.
·  Maintain excellent presentation standards and cost control for all food items, maintaining recipe standards.
·  Prepare mis-en place as required
·  Participate in creating various exciting menu items
·  Ensure strict stock rotation and minimum wastage
·  Maintaining Accor’s high standards in food hygiene and quality, with a working understanding of and the ability to maintain food safety standards and HACCP.

Qualifications

YOUR EXPERIENCE AND SKILLS INCLUDE:

·  Prior experience in fast-paced, busy kitchens in a multi outlet hotel operation highly desirable
·  A working understanding of and the ability to maintain food safety standards
·  Excellent communication skills
·  A natural leadership style and can work collaboratively with your colleagues
·  An eagerness to help develop others in addition to yourself
·  The capacity to multi task and cope well under pressure
·  Trade qualified (minimum Certificate III Commercial Cookery)
·  Availability to work varied shifts from early mornings to late evenings, including weekends and Public Holidays as per our business demands.
·  Current working rights within Australia
