Job description

Responsible for the smooth operation of all kitchens in accordance with current standards and contributes to achieving kitchen objectives as directed by the Executive Chef (food cost, quality standards, etc.)

ACTIVITIES

- Determines, during the absence of the Executive Sous Chef, the supplies necessary for the proper functioning of all kitchens.
- Prepares and oversees the preparation, following the Executive Chef’s instructions, of flavorful dishes within reasonable timeframes requested by customers, while adhering to hygiene standards required by law and ensuring good quality/price ratios.
- Minimizes food waste and ensures the legal use of leftovers.
- Controls, during the absence of the Executive Sous Chef, the delivery of perishable goods and monitors product quality.
- Respects and enforces, according to received directives, the necessary measures regarding productivity, material costs, and other charges that should not exceed budget limits, while maintaining excellent food quality.
- Efficiently distributes and directs kitchen staff tasks in the absence of the Executive Chef for maximum customer satisfaction and fosters a positive work atmosphere.
- Ensures that all orders comply with the company’s quality standards: appealing and fresh garnishing and presentation, consistency, succulence, and appropriate temperatures and preparation times, etc.
- Adheres to and enforces the pre-established attendance schedules from superiors based on expected workload during the absence of the Executive Chef.
- Assists the Executive Chef in evaluating kitchen staff performance according to current procedures.
- Upholds and ensures exemplary discipline among kitchen staff across all sections.
- Assists the Executive Sous Chef in monitoring repairs and preventive maintenance with the Technical Department.
- Ensures that kitchen staff comply with current procedures related to order billing.
- Demonstrates initiative for improving recipes or presentations using personal creativity and that of the cooks while respecting the Company’s culinary standards.
- Ensures perfect collaboration with all sections of the kitchen and hotel services.

GENERAL REQUIREMENTS

- Must know and adhere to hotel safety measures and internal regulations.
- Maintains personal appearance (clean and presentable attire, appropriate shoes, always well-groomed).
- Attends to personal health and hygiene.
- Performs any tasks assigned by a superior or the General Manager.
