DoubleTree by Hilton Hotel Melbourne Flinders Street is conveniently located opposite the historic Flinders Street Station and is within walking distance of corporate offices, the famous Melbourne Laneways, and the South Bank precinct. Along with their world-famous chocolate chip cookies, DoubleTree features include 187 guest rooms, a restaurant and bar, fully equipped gym and meeting & event spaces.

What will I be doing?  
As Senior Chef de Partie, you will be the Chef’s right hand in managing the day to day running of the kitchen as well as developing your passion for food to ensure high quality food production for hotel outlets. As the Senior Chef de Partie, you will collaborate closely with the Head Chef to oversee a team of 7, managing food production to ensure the preparation of daily meals for various culinary operations within the hotel. Your key responsibilities will include:

·  Ensure seamless food production throughout all meal periods, including meetings, events, and team member meals
·  Training the team and upholding food safety practices across the kitchen brigade.
·  Ordering and holding team members accountable for stock rotation.
·  Assist the Head Chef with menu development.
·  Complete daily food orders when required, whilst maximising the use of ingredients to minimise waste.
·  Regularly check that all kitchen equipment is clean and in good working order.
·  Ensure that all kitchen team members meet all hotel, hygiene and Work Health and Safety requirements.
·  Develop a positive relationship with guests, team members and contractors.

What are we looking for?

·  A minimum of 3 years demonstrated experience in a similar role.
·  A current, valid, and relevant trade commercial cookery qualification.
·  Excellent planning, organising and time management skills.
·  Extensive knowledge of kitchen equipment and is able to train staff in its use.  
·  Knowledge of food safety systems.
·  Ability to prioritise and complete tasks on time.
·  A current, valid Food Safety Supervisor Certificate for Hospitality
