Job description

The Hygiene Officer is responsible for maintaining the highest standards of cleanliness, hygiene, and sanitation across all areas of Waldorf Astoria Seychelles Platte Island, with a focus on food safety and compliance with local and international regulations. The Hygiene Officer will develop and implement hygiene protocols, conduct regular inspections, and provide training to ensure a safe and healthy environment for guests and team members.

Key Responsibilities:

· 
Hygiene and Sanitation Management:

·  Develop, implement, and monitor hygiene and sanitation standards across the property, especially in food and beverage areas.
·  Ensure all areas comply with local health regulations and Hilton brand standards.
· 
Food Safety Compliance:

·  Oversee the management of food safety systems, including HACCP (Hazard Analysis Critical Control Point) processes.
·  Conduct regular inspections of kitchens, storage areas, and service stations to ensure food safety protocols are followed.
·  Coordinate with F&B teams to establish safe handling, preparation, and storage of food items.
· 
Training and Education:

·  Train all food-handling staff in hygiene and sanitation practices to ensure consistent compliance.
·  Conduct refresher courses and updates on hygiene standards for all team members as needed.
· 
Audit and Inspection:

·  Prepare for and manage external hygiene audits; conduct internal audits to preemptively address any non-compliance.
·  Maintain records of audits, inspections, and corrective actions for internal use and regulatory compliance.
· 
Pest Control Management:

·  Coordinate with pest control services to maintain a pest-free environment, particularly in high-risk areas such as kitchens and storage facilities.
· 
Health and Safety Reporting:

·  Document and report any hygiene or safety concerns promptly, proposing corrective actions.
·  Provide monthly reports to management on hygiene standards, compliance, and any incidents or areas for improvement.

Qualifications:

·  Bachelor’s degree or diploma in Food Science, Microbiology, Environmental Health, or related field preferred.
·  Certification in HACCP, food safety, or hygiene management.
·  Minimum of 2 years of experience in a similar role, ideally in a luxury hotel or resort setting.
·  Strong knowledge of hygiene regulations, including HACCP and Seychelles public health standards.
