Job description

A Food and Drink Director oversees the strategic direction, operational performance, and financial success of all food and drink venues within the property. This includes restaurants, bars, in-room dining, banqueting and any special F&D events; leading department heads, ensuring excellence in guest service, driving revenue growth, and maintaining the highest standards of quality, safety, and hospitality.

What will I be doing?

As a Food and Drink Director, you are responsible for managing operations of all Food and Beverage outlets to deliver an excellent Guest and Member experience. A Food and Beverage Director will also be required to manage, train, and develop team members and work within all budgeted guidelines. Specifically, you will be responsible for performing the following tasks to the highest standards:

Develop and implement the F&D business strategy in alignment with the overall organizational goals.

 Lead, mentor, and guide venue managers and service leaders to achieve excellence in service and performance.

· 
Continuously improve and innovate F&D concepts to enhance guest satisfaction and revenue potential.

· 
 Oversee the daily operations of all F&D venues (restaurants, bars, in-room dining, banquets, lounges).

· 
 Ensure all areas operate smoothly, efficiently, and in accordance with brand and service standards.

· 
Conduct regular walkthroughs to monitor service quality, cleanliness, and team interaction.

· 
 Develop and manage department budgets, forecasts, and financial goals.

· 
Monitor costs, control expenses, and implement strategies to improve profit margins (labor, food cost, beverage cost).

· 
Analyze sales reports and KPIs to identify areas of opportunity and growth.

· 
Maintain and enforce the highest levels of service, presentation, and product quality.

· 
Collaborate with Executive Chefs and Bar Managers on menu planning, pricing, and seasonal updates.

· 
 Oversee development of special events, promotions, and unique dining experiences.

· 
 Foster a culture of continuous learning, service excellence, and team engagement.

· 
 Ensure succession planning and career development opportunities for team members.

· 
 Ensure all F&B operations are compliant with local health, safety, and sanitation regulations (e.g., HACCP).

· 
 Promote safe working conditions and proper handling/storage of food and beverages.

Experience in strategic planning, budgeting, forecasting, and cost control.

Ability to implement and maintain guest satisfaction systems and service recovery protocols.

Proficient in analyzing P&L statements, F&B KPIs, and inventory systems.

· 
Ability to lead menu engineering, pricing strategies, and revenue optimization efforts.

· 
Skilled in planning and executing promotions, seasonal menus, and themed experiences.

· 
Ability to work cross-functionally with marketing, HR, culinary, finance, and events teams.

·
