Job description
We are looking for Director, Food & Beverage (F&B) Hotel Openings - Asia Pacific (APAC) with strong culinary / kitchen experience to drive kitchen design and food quality pre and during opening.
HOW YOU WILL MAKE AN IMPACT
Your role is important and below are some of the fundamental job duties that make your work unique.
· Serve as a subject matter expert for F&B, restaurant, bar and culinary discipline within APAC
· Provide direction on new hotel openings, restaurant concepts, menus, food quality, and kitchen design
· Participate in pre-opening training for all F&B outlets
· Assist with creating menus, recipes, and food testing
· Train chefs and heart of the house teams on kitchen management
· Lead food quality improvement in both new and current trading hotels
· Understand culinary trends
· Review and optimize kitchen and dining room design and layout
· Provide expertise and support on new build and renovation F&B, restaurant and bar concept development and designs, reviewing spaces, facilities, and drawings throughout development phases
· Maintain and communicate updated F&B standard operating procedures (SOPs), and ensure consistency in messages that support Hilton strategies
· Partner with Architecture, Design & Construction (AD&C) team in bringing new build, renovation, and conversion projects' F&B concepts to life
· Liaise with Opening teams and support hotels through pre-opening and opening processes, including providing F&B, restaurant and bar expertise and training for specialists, and coordinating taskforces as needed
· Perform other duties as assigned to meet business needs
WHY YOU’LL BE A GREAT FIT
You have these minimum qualifications:
· 5+ years of recent experience in F&B, restaurant and bar management
· 10+ years of experience in F&B including experience as a department leader managing a culturally diverse workforce
· Strong culinary skill / background
· Hotel opening experience
· Understanding of multi brand standards and process flow of supporting hotels during the pre-opening phase
· In-depth knowledge of F&B, restaurant and culinary management discipline, processes, and procedures
· Comprehensive financial management skills, ability to analyze P&L, budgeting, CAPEX planning, and forecasting
· Strong understanding of interrelationships with related departments such as Meetings & Events and Culinary
· Demonstrate a thorough understanding of the lodging business (hotel operations, industry drivers, challenges, competitors, Hilton's position in the global marketplace) and cutting-edge F&B trends to unveil opportunities for growth
· Highly organized, strong relationship management skills and passion for training
· 60% of travel time
