Job Description
We are seeking a talented and passionate Teppan-yaki Junior Sous Chef to join our esteemed culinary team in Tokyo, Japan. As a key member of our kitchen staff, you will assist in creating unforgettable dining experiences for our guests through your expertise in teppanyaki-style cooking and leadership skills.
· Assist the Head Chef and Sous Chef in overseeing daily kitchen operations, focusing on the teppanyaki station
· Prepare and cook a variety of dishes using teppanyaki techniques, ensuring high-quality presentation and taste
· Maintain cleanliness and organization of the teppanyaki cooking area
· Train and mentor junior chefs in teppanyaki cooking methods and techniques
· Collaborate with the culinary team to develop new menu items and seasonal specials
· Ensure compliance with food safety and sanitation standards
· Assist in inventory management and ordering of ingredients
· Participate in menu planning and cost control measures
· Provide excellent customer service by interacting with guests during teppanyaki performances
Qualifications
· Culinary degree or diploma from a recognized institution
· Minimum 3-5 years of experience in teppanyaki cooking, preferably in a high-end restaurant or luxury hotel setting
· Strong knife skills and proficiency in teppanyaki cooking techniques
· In-depth knowledge of Japanese cuisine, ingredients, and culinary traditions
· Current food safety and sanitation certification (e.g., ServSafe)
· Excellent communication and teamwork skills
· Ability to work efficiently in a fast-paced environment
· Physical stamina to stand for extended periods and work in a hot kitchen
· Strong leadership and mentoring abilities
· Fluency in English; Japanese language skills are highly desirable
· Work permission is Japan is necessary
· Previous experience as a sous chef or in a leadership role is preferred
