About the Venues:

Level 2

Bar Tilda  – Nominated as  Hotel Bar of the Year  at the Australian Bartender Awards ,  Bar Tilda is a cocktail and whisky bar inspired by Australian ingredients, flavours, and nostalgic storytelling. Guests can explore our 100+ Australian whisky library or enjoy a custom martini served table side from our Archie Rose trolley.

Tilda  – A relaxed dining experience celebrating simplicity and sustainability. The approachable menu showcases Australian produce from dedicated small-scale growers, house-made pastas, charcoal-grilled meats and seafood, and nostalgic desserts.

Level 5

· 
Wentworth Bar  – A vibrant CBD rooftop at the Sofitel Sydney Wentworth, spanning a 495sqm all-weather terrace with space for 250 guests. Expect DJs, creative cocktails, Champagne, and global flavours, alongside modern Vietnamese-inspired bar snacks, light meals, and substantial plates.

Delta Rue  – A lively Vietnamese–French restaurant blending 1920s Hanoi elegance with modern vibrance. Seating 150 indoors plus 60 on a lush terrace, it features a buzzing Champagne bar and a menu celebrating local produce with fresh, bold flavours.

Job Description

About the Role:

As  Precinct Beverage Manager , you’ll oversee the beverage programs across the four venues above. From creating seasonal wine and cocktail lists to managing suppliers, activations, and training, you’ll lead the way in delivering drinks that excite guests and keep standards high. You’ll work closely with venue managers and the beverage director while developing and motivating a skilled team.

Key Responsibilities will include:

· 
Overseeing the Australian Whiskey Embassy

· 
Designing and maintaining wine and cocktail lists

· 
Driving spirit and wine activations

· 
Supplier coordination and relationship management

· 
Training & development of the beverage team

· 
Supporting recruitment of the beverage team

Qualifications

What We’re Looking For

We’re after someone with multi-venue experience, strong expertise in both cocktails and wine, and a hands-on leadership style. You’ll be organised, commercially minded, and passionate about mentoring others, with the ability to balance creativity and consistency across busy bars and restaurants.
