Job Description
We are seeking a talented and experienced Mezza Chef to join our culinary team in Jeddah, Saudi Arabia. As a Mezza Chef, you will be responsible for creating and executing a diverse range of Middle Eastern appetizers and small plates that showcase the rich flavors and traditions of the region.
· Prepare and oversee the production of a wide variety of mezza dishes, ensuring consistency and quality
· Develop and refine mezza recipes, incorporating both traditional and innovative techniques
· Collaborate with the head chef to create seasonal menus and daily specials
· Manage inventory, place orders, and control food costs for the mezza section
· Ensure compliance with food safety and sanitation standards in the kitchen
· Train and supervise junior kitchen staff in mezza preparation techniques
· Maintain a clean and organized work environment
· Assist in other kitchen duties as needed during peak hours
Qualifications
· Culinary degree or diploma from a recognized culinary institution
· Minimum 3-5 years of experience as a Mezza Chef or in a similar role
· Extensive knowledge of Middle Eastern cuisine, particularly mezza dishes
· Strong knife skills and proficiency in various food preparation techniques
· Expertise in menu planning and recipe development
· Proven experience in high-volume restaurant kitchens
· Excellent understanding of food safety and sanitation practices
· Current food safety certification
· Proficiency in operating and maintaining kitchen equipment
· Strong time management and multitasking abilities
· Effective team leadership and communication skills
· In-depth knowledge of Middle Eastern flavors, ingredients, and cooking techniques
· Understanding of dietary restrictions and allergen management
· Ability to work in a fast-paced environment and handle pressure
· Creativity and passion for culinary innovation
