Job Description
We are seeking a talented and experienced Sous Chef to join our culinary team in Baghdad, Iraq. As the second-in-command of our main kitchen, you will play a crucial role in maintaining our high standards of food quality and kitchen operations.
· Supervise food production and presentation to ensure quality and consistency.
· Ensure all food is prepared as per standard recipes and hygiene standards.
· Assist in planning, organizing, and directing food preparation in the kitchen.
· Coordinate kitchen operations during service to ensure smooth workflow.
· Maintain high levels of cleanliness, organization, and sanitation in all kitchen areas.
· Lead and supervise kitchen team members, including Commis, CDPs, and other junior chefs.
· Conduct daily briefings and ensure clear communication of menus, tasks, and expectations.
· Assist in training, mentoring, and developing culinary staff.
· Foster a team-oriented, supportive environment with a focus on continuous improvement.
· Assist in monitoring food cost, portion control, and minimizing waste.
· Participate in stock rotation, ordering, and inventory checks.
· Ensure all products are stored correctly and used within expiry dates.
· Collaborate with Executive Chef in menu planning, tastings, and specials.
· Recommend improvements for menu items based on guest feedback and trends.
· Enforce strict hygiene standards and HACCP procedures.
· Monitor equipment maintenance and cleanliness.
· Ensure compliance with local food safety and sanitation regulations.
Qualifications
· Minimum 3-5 years of experience in a high-volume kitchen, with previous Sous Chef experience preferred
· Advanced knowledge of culinary techniques, menu planning, and kitchen equipment operation
· Strong leadership skills with the ability to manage and motivate a diverse team
· Excellent organizational and time management abilities
· Proficiency in inventory management and cost control
· Up-to-date Food Safety Certification
· Knowledge of various cuisines, particularly Middle Eastern and international
· Ability to work in a fast-paced environment and handle high-pressure situations
· Strong communication skills in English; knowledge of Arabic is a plus
· Flexibility to work evenings, weekends, and holidays as required
