Chef de Partie - Japanese Specialty

Job Description

A Chef de Partie - Japanese Speciality is working on rotating shifts and is in charge of training and supervising the work of the kitchen personnel in their sections. Maintained high-quality Japanese food preparation and service standards in the Arts Cafe kitchen. 

Qualifications

 

·  Culinary Education : A formal culinary education from an accredited culinary institute or a similar educational background is preferred.
·  Japanese Culinary Expertise : In-depth knowledge and expertise in Japanese cuisine are essential. A strong understanding of traditional Japanese cooking techniques, flavors, and presentation styles is necessary. Familiarity with different regional Japanese cuisines and a grasp of authentic ingredients and their sourcing is advantageous. 
·  Culinary Experience : Significant culinary experience with a focus on Japanese cuisine is required. Candidates are expected to have 3-4 years of experience working in professional kitchens, preferably in luxury hotels or high-end Japanese restaurants. Experience in various kitchen stations and exposure to different aspects of Japanese cuisine (such as sushi, sashimi, tempura, and teppanyaki) is beneficial. 
·  Technical Skills : Strong culinary skills and proficiency in Japanese cooking techniques are necessary. This includes mastery of knife skills, fish butchery, sushi rolling, and other specific Japanese culinary techniques. Experience in handling and preparing raw fish and seafood is highly valued. 
·  Menu Knowledge and Creativity : A deep understanding of Japanese flavors, ingredients, and their combinations is essential. The ability to create balanced and innovative Japanese dishes while staying true to tradition is important. Candidates should have experience in menu development, including creating daily specials and seasonal menus. 
·  Leadership and Teamwork : The role of Chef de Partie - Japanese Specialty often involves supervising a team within the kitchen. Therefore, leadership and teamwork skills are crucial.
·  Quality Control and Standards : A strong commitment to maintaining high culinary standards, quality control, and attention to detail is essential. Familiarity with food safety and sanitation regulations, including HACCP (Hazard Analysis and Critical Control Points) protocols, is important. 
·  Adaptability and Multitasking : Chef de Partie - Japanese Specialty must be adaptable and able to handle multiple tasks simultaneously in a fast-paced kitchen environment. They should be able to prioritize effectively, work under pressure, and meet deadlines. 
·  Communication and Interpersonal Skills : Excellent communication and interpersonal skills are necessary for effective coordination with the kitchen team and interaction with other departments, suppliers, and guests. The ability to work collaboratively in a team-oriented environment is crucial. 
·  Passion for Japanese Cuisine : A genuine passion for Japanese culinary arts, a strong desire to continuously improve skills, and a dedication to delivering authentic and exceptional Japanese dining experiences are highly valued.
