ABOUT THIS ROLE:

Flavor Development is a critical and leading capability that R&D provides to the business.  This requires a strong Science and Technology Flavor Science Program that can provide leading-edge flavor systems / technologies.  A critical role within this program is a Flavor Scientist to lead research initiatives which increase the foundational understanding of flavor science as it relates to areas such as analytical flavor chemistry and trace volatile analysis, identification of key sensory and bio-active compounds, flavor formulation and consumer drivers.  Also to deliver against short and long term projects which enable optimal product performance, value and scale thru flavor.  The Flavor Scientist shares knowledge and insights gained with Wrigley and the Mars Corporation and partners with suppliers, universities and research consortia to strengthen Wrigley's global position in gum and confections.

 

WHAT YOU'LL DO:

- Deliver on workstreams within flavor chemistry project to increase core competency and fundamental understanding of flavor science
- Lead the delivery of short and long-term flavor science projects for performance, value and scale
- Develop subject matter expertise in flavor chemistry and trace volatile analysis (GC-MS, GC-Olfactometry) and identification of key sensory and bio-active compounds
- Provide technical leadership and expert support to regional R&D and the broader business
- Collaborate with Commercial, NPD, Sensory, Analytical, QA, Regulatory, Legal and Mars segments
- Partner externally with suppliers, universities, and research consortia

 

REQUIREMENTS:

B.S. in Chemistry/Biochemistry/Food Science required

 

 

M.S. /Ph.D. in Chemistry/Biochemistry/Food Science preferred
3 years of experience in Chemistry, Biochemistry or Food Science required
3 years of experience in analytical flavor chemistry and identifying/quantifying trace sensory actives  preferred  

 

OTHER SKILLS

- Flavor chemistry training and/or experience required
- Analytical chemistry, especially GC, GC-MS, GC-O, and SPME required
- Analytical flavor chemistry and identifying/quantifying trace sensory actives preferred
- Natural products chemistry and identifying/screening bio-actives preferred
- Mint science experience preferred
- Taste physiology & modulation preferred
- Sensory and Consumer Insights tools and techniques preferred
- Flavor, gum and confectionery formulation & manufacture preferred

 

PHYSICAL REQUIREMENTS
- Maintenance and installation of GC-FID, GC-MS and GC-Olfactometry instruments
- Solvent extractions, preparing silica columns for flavor separation and concentration of extracts
- 15 - 25% travel required
