POSITION SUMMARY  
As Head Sommelier of the Palace hotel, you will be responsible for developing and curating a world-class wine program that enhances and complements the culinary experience. The focus is on curating an extensive and balanced selection of wines, working with prestigious, well-known estates, as well as discovering up-and-coming producers who demonstrate strong environmental stewardship. Your goal is to provide guests with an unparalleled wine experience, where they can enjoy personalised guidance, and your expertise will help them explore new varietals and regions, all while respecting their preferences and enhancing their loyalty.

You will lead the wine-buying process and oversee stock management, ensuring that the inventory remains dynamic and reflective of the hotel's standards. Building strong relationships with suppliers, managing stock rotation, and recognising regular guests’ wine preferences will be essential to your role, as well as guiding both the guest and staff in wine pairings and discoveries.

Key Responsibilities  
• Curating the Wine Selection – Source and purchase wines from prestigious estates and promising, environmentally responsible producers. Ensure the selection reflects a balance between well-known labels and boutique, unique offerings. Develop a philosophy around the wine program that complements the culinary vision of the Palace.  
• Wine Pairing and Guest Guidance – Work closely with the culinary team to create harmonious food and wine pairings that elevate the dining experience. Personally guide guests through their wine choices, recognising regulars and recording their preferences, while helping them explore new and exciting wine regions and varietals.  
• Wine Experience Program – Develop and lead wine events, tastings, and wine dinners, creating immersive experiences for guests that showcase the depth of the hotel’s wine program. Foster guest engagement and loyalty through personalised service and education.  
• Stock Management and Rotation – Oversee all aspects of wine stock management, ensuring optimal inventory levels, appropriate stock rotation, and minimisation of waste. Regularly review inventory to ensure the selection remains fresh, relevant, and in line with the overall goals of the hotel’s wine program.  
• Supplier Relationships and Wine Buying – Build and maintain strong relationships with wine producers, distributors, and vendors to negotiate favourable pricing and secure exclusive or limited-edition wines. Ensure that sustainable and environmentally friendly producers are prioritised in the selection process.  
• Training and Staff Development – Lead ongoing wine education and training for restaurant, bar, and service teams, ensuring that they have the knowledge and confidence to recommend wines and enhance the overall guest experience.  
• Record Keeping and Guest Preferences – Maintain detailed records of guest wine preferences, using this information to personalise future dining experiences, foster loyalty and drive spend.

Education and Experience  
• Extensive experience as a Head Sommelier, or similar role in a luxury hospitality or fine dining environment. 
• Advanced certification in wine education (such as WSET Level 3 or higher, Court of Master Sommeliers, or equivalent).  
• Deep knowledge of global wine regions, varietals, and emerging trends, with a strong emphasis on sustainable and environmentally responsible practices.

• Wine Curation Expertise – Proven ability to curate a diverse wine list that balances prestigious labels with emerging talent, while maintaining a commitment to environmental sustainability.  
• Guest-Centred Approach – Passion for creating memorable guest experiences through personalised wine service, guest recognition, and wine discovery.  
• Operational Excellence – Experience managing wine inventory, stock rotation, and budget oversight, with an eye for ensuring profitability without sacrificing quality.  
• Supplier Relationships – Ability to build relationships with wine producers and distributors to ensure a steady supply of high-quality, exclusive wines suitable for the local Spanish market as well as international travellers. 
• Leadership and Training – Strong leadership skills with a focus on continuous staff education and development in wine service and pairings.  

Physical Requirements  
• Ability to stand and move for extended periods of time in a dynamic environment.  
• Ability to lift and manage wine stock during deliveries and inventory management.
