High School diploma/G.E.D. equivalent
Preferred qualifications :
Work Experience in Accounting, Finance or
Audit is preferable
Critical tasks:
Responsible for safeguarding the company's investment in F&B inventory by preventing and limiting excessive costs at each point where the raw materials flow through the operation. Ensures that the hotel's policies are adhered to in the areas of purchasing, receiving, storing, issuing and revenue control. Supplies management with the tools for planning and controlling of the F&B Department. Responsible for preparing accounting information relating to food and beverages and enabling timely preparation of financial and statistical reports.

· Computer, Cost Analysis and general ledger knowledge.
Essential job function
· Daily control & analyze of Inventory postings to MC, and prepare the Receiving transaction ready for uploading into SUN by Accounts Payable.
· Beverage PAR spot check of Outlets.
· Prepare weekly Flash Food Cost report and send it to the related HODs.
· Control the Open Food & Beverages checks on micros sales report.
· Inventory spot check versus Stock on Hand report.
· Control and proceed Interdepartmental transfers.
· Costing new menu before entering in Micros and periodically review a la carte menu items sales prices.
· Distribute Updated prices log for Inventory to HODs.
· Market prices spot check minimum once a month.
· Make surprise controls in Bars and Restaurants to ensure that procedures and service instructions are followed and quantity meet the desired standards.
· Reviewing and auditing of all F&B invoices and verify that quantities and prices listed are those of purchase orders, market lists and/or various beverage orders lists.
· Take inventories on a monthly basis of all stores (sub stores), log the Inventory results in MC.
· Prepare Inventory consumption report, send it to the all related HODs, receive feedback from respective Division Heads, make necessary adjustments if is required, and transfer all Inventory consumption results into SUN.
· Prepare “Store Balance” report and submit it to ADOF and DOF before month end closing.
· Prepare Shrinkage report (Consumption vs Sales) for the alcohol and tobacco products, and submit this report to the related HODs.
· Assist in establishing and checking purchase specifications and periodically review them to make sure that they are followed and also check if competitive market prices are being obtained.
· Inspect the receiving and storing/issuing departments and confirm that the established Ritz-Carlton, Astana Procedures are maintained.
· Control on a daily basis Purchase Orders for MC and Non MC (direct purchase) products and ensure vendor and price selection is the best optimal choice.

Job Summary
Perform physical inventories for the food and beverage and retail areas as required. Perform routine analysis on product mix/margin and guest preference information to help the operations staff understand the impact of their merchandising efforts on revenue. Assist with inputting prices, menu changes and user changes in the point of sale (POS) system. Input receipt of all food, beverage and non-food products into the inventory and into the recipe part of the purchasing system. Investigate all measurement unit issues and noticeable price variances as required. Update all inventory requisitions through the inventory and purchasing system. Assist in the calculation of potential cost of sale ratios. Maintain master cost files and recipes. Perform random checks to verify all products are stored appropriately and secured.
Follow all company policies and procedures; verify uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets; protect the privacy and security of guests and coworkers. Speak with others using clear and professional language; prepare and review written documents accurately and completely; answer telephones using appropriate etiquette.
