To clean and maintain all kitchen equipment and utensils, and to ensure that the kitchen and outlying areas are thoroughly cleaned and maintained in line with all current Health & Safety and Hygiene regulations and company standards.

Qualifications :

Job Summary

The following are specific responsibilities and contributions critical to the successful performance of the position:

·  Empty, wash, clean and drain all trash cans with a hose. Replace cans at the end of each shift.
·  Clean the walk-in boxes by wiping down all stainless bins, walls, doors and windows with a clean rag moistened with sanitizer and “rinse dry”. Clean floors by sweeping, mopping with a clean mop in soapy water, rinsing with a clean mop in hot water and drying with a clean damp mop. Be sure to move all mobile racks and shelves in order to do an efficient job. Replace when floor is dry.
·  Clean the associate cafeteria by wiping all tables and chairs, stacking all chairs on tables, removing all garbage and breakdown carts. Sweep, scrub, mop and dry all floors with a clean mop and clean rinse water.
·  Weekly, clean all ovens and hoods with spray oven cleaner, scraping the carbon, rinsing and wiping dry, not leaving any streaks. Clean all ceiling vents in all the prep kitchens and service kitchens, banquet aisle, and corridor.
·  Nightly, clean the kitchen floors and walls with hot soapy water, rinse dry. Empty & clean trash cans, following procedure above.
·  Service Kitchen- clean floors with a clean mop, hot soapy water, and hot rinse water. Clean the walls with hot soapy water and sanitizer. Rinse dry. Empty and wash trash cans.
·  Move out all carts and racks from the banquet aisle. Sweep, mop and remove wax drippings from the floor.
·  Sweep and mop all hallways in the kitchen/cafeteria and scrub all bumper strips, clean walls. Sweep and mop the kitchen floor with hot soapy water and a clean mop. Rinse dry.
·  Sweep and rinse off the back dock, squeegee, dry and assure that it is organized with hoses and carts all placed out of the way of traffic.
·  Be available, at the request of the food production manager, to be assigned to another area, not covered in this description, such as washing excess pots and pans o n a busy evening
·  Do heavy duty cleaning of walls, ceilings, furniture and artefacts in Kitchen
·  Ensure floats are counted and balanced at start and end of shift and they are secure at all times. Blind Banking
procedures are followed along with all local and Marriott policies and procedures.

OTHER
·  Performs other related tasks as assigned by management.
·  Complies with Marriott International Hotels Limited Regional Office policies and procedures.
