POSITION SUMMARY
Essential Job Functions:
· Complete knowledge of
· All liquor brands, beers and non-alcoholic selections available in the Restaurant
· The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
· Designated glassware and garnishes for drinks
· All teas and coffees products : Service procedures
· All food and beverage products served in the Restaurant
· All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
· Daily menu specials. 86’d items
· Daily house count, arrivals / departure, VIPs
· Scheduled in-house group activities, locations and times
· Maintain complete knowledge and strictly abide to local liquor laws, particular those prohibiting service to minor, intoxicated persons and drunk driving
· Maintain complete knowledge of correct maintenance and use if equipment only as intended
· Maintain complete knowledge and comply with all department policies/service procedures
· Obtain assigned bank and ensure accuracy of contracted monies. Obtain change required for expected business level. Keep bank secure at all times
· Obtain a security escort whenever transport bank to/from Bar, if required
· Obtain outlet’s key from security
· Complete opening side duties:
· Check quality and amount of all bar stock and supplies by using checklist
· Complete opening inventory sheet
· Requisite all necessary supplies
· Transport supplies from storeroom to the Restaurant
· Stock ice in bar
· Set up bottles in display cabinet and speed rail
· Prepare garnishes
· Stock glassware and paper supplies
· Set up ashtrays with matches
· Prepare mixes
· Check condition and cleanliness of blender, shaker and other tools
· Check temperature of refrigeration units and glass wash machine
· Change date on credit card imprinter at opening unit
· Inspect, plan and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel
· Answer outlet’s phone within 3 rings, using correct salutation and telephone etiquette
· Greet guest and take guests’ food and beverage orders, utilizing suggestive selling techniques and following all departmental standards
· Anticipate guests’ needs, respond promptly and acknowledge all guests, even when it is busy
· Maintain positive guest relations
· Be familiar with all hotel services/features and local attractions/activities to respond accurately to any guest inquiry
· Handle guest complaints by following the instant pacification procedures and ensuring guest satisfaction
· Access all functions of micros system in accordance to specifications. Restock journal tape and change ribbons as needed
· Ensure that all drink orders from servers are accurately rung into the Micros system before giving drinks to them
· Legibly document orders when system is down and distribute orders to servers; ensure authorization for room charge. Obtain manual checks and follow all Accounting procedures.
· Process all payment methods in accordance with Accounting procedures and policies
· Accommodate guest requests for change courteously
Maintain cleanliness, sanitation and condition of bar, guest and service area; following procedures laid down in departmental standards
· Ensure all drink orders for guest according to outlet recipes
· Provide club service for designated beverages
· Serve drinks to guests
· Retrieve food orders from kitchen and serve to guests
· Open and serve wine/champagne
· Prepare and serve cappuccino and espresso.
· Monitor and maintain cleanliness and organization of bar-top, tables, service area and outlet itself.
· Replace ashtrays with 1 or more butts with clean ashtray by using capping method
· Remove soiled wares from bar-top and tables to dishwashing area
· Complete designated closing reports in the Micros system
· Pay out tips to designated staff and document such, following Accounting and legal requirements
· Count bank at end of shift and secure bank
· Legibly complete designated cashier reports and distribute in accordance with Accounting procedures
· Balance and drop receipts according to Accounting specifications
· Extend courteous departure when guests leave outlet
· Close all guest checks in the micros system immediately upon payment
· Clean glassware in glass machine/ three compartment sink
· Assist servers/Lobby hostess in their job functions to ensure smooth and efficient service to guest
· Clearly communicate last call at designated closing time to guest and Lobby hostess
· Legibly complete bottle transfer slips and distribute accurately
· Legible document designated items on the spill sheet
· Ensure maximum usage of all supplies to attain budgeted beverage cost and to prevent waste
· Use all chemicals in accordance with hotel regulations and requirements
· Count all empty bottles by type and legible document such on the requisition form; attach transfer slips/spill report and place in manager’s office
· Successfully completion of the training / certification process
· Foster and promote a cooperative working climate, maximizing productivity and employee morale
· Assist servers with expediting problem payments. Ensure all cashiering procedures are processed in compliance with Accounting standards
· Legibly document pertinent information in outlet log book
· Complete all closing reports in the POS system
· Complete all paperwork and closing duties in accordance with departmental standards
· Return outlet keys at end of shift to security
Experience
· Has worked in a bar before in a 5 star hotel / resort
Education
· High school graduate, some college.
Required Skills
· Minimum 21 years of age to serve alcoholic beverages
· Food handling certificate.
· Knowledge of various drinks recipes and beverage service standards.
· Ability to satisfactorily communicate in English with guests, management and co-workers to their understanding.
· Ability to provide legible communication.
· Ability to compute basic mathematical calculations.
· College degree
· Ability to communicate in a second language, preferably Arabic.
· Certification of previous training in liquor, wine and food service.
· Any previous culinary training.
· Ability to enforce hotel’s standards, policies and procedures with assigned staff
· Ability to be well organized, maintain concentrating and think clearly when providing service to the guests within any given period of time
· Ability to access and input information into Micros system.
· Ability to maintain good coordination while serving orders quickly
· Ability to be a clear thinker, analyze and resolve problems exercising good judgment
· Ability to focus attention to details
· Ability to prioritize and organize work assignments; delegate work.
· Ability to direct performance of assigned staff and follow-up with corrections where needed.
· Ability to motivate assigned staff and maintain a cohesive team
· Ability to ascertain staff training needs and provide such training
· Ability to suggestively sell menu items, beverages and wines
· Ability to exert physical effort in transporting trays from service area to guest
· Ability to exert physical effort in transporting food and beverage to guest
· Ability to exert physical effort in transporting equipment and wares
· Ability to endure abundant physical movements in carrying out job duties
· Ability to ensure security and confidential of guest and hotel information
· Ability to ensure security of storage room access and hotel property
· Ability to perform join functions without direct supervision
