Duties and responsibilities of the Senior Sous Chef role
As Senior Sous Chef, you will play a key leadership role within the kitchen brigade, supporting the Executive Chef in driving culinary excellence, operational efficiency, and team development.
· Support the overall management of kitchen operations, ensuring the highest standards of food quality, consistency, and presentation at all times.
· Take ownership of day-to-day kitchen leadership, supervising Sous Chefs and junior team members to ensure smooth, organised, and efficient service.
· Lead by example, motivating and developing the team through hands-on leadership, coaching, and training.
· Contribute to menu planning, recipe development, costing, and the implementation of Hyatt culinary standards and brand concepts.
· Oversee food preparation, cooking, and plating across all outlets to ensure consistency, portion control, and adherence to approved recipes and specifications.
· Assist with stock control, ordering, waste management, and cost control to meet financial targets and minimise food waste.
· Ensure the kitchen operates in full compliance with food safety, hygiene, and health & safety regulations, maintaining a clean, safe, and well-organised working environment.
· Work closely with front-of-house and other hotel departments to deliver seamless service and exceptional guest experiences.
· Act as the Executive Chef's deputy when required, supporting rota planning, recruitment, performance management, and disciplinary processes as needed.
About You
You will have proven experience as a Senior Sous Chef or strong Sous Chef ready to step up, ideally within a hotel or high-volume kitchen environment. You are a confident and passionate culinary professional with excellent leadership and organisational skills. You take pride in delivering consistently high standards, developing your team, and contributing creatively to menus while maintaining strong operational control.
