Position Summary
A Sous Chef Pastry is responsible for contributing to menu creation and managing and training the Pastry/ Bakery brigade to deliver an excellent guest and member experience while managing food cost controls.
What will you be doing?
As a Sous Chef Pastry you are responsible for performing the following tasks to the highest standards:
· Contribute to menu creation.
· Ensure consistency in quality of baked goods all the time.
· Manage and train pastry brigade and support pastry team when needed.
· Manage customer relations when necessary in the absence of Pastry Chef.
· Ensure resources meets business needs through the effective management of working rotas.
· Manage food cost controls to contribute to Food and Beverage revenue.
· Ensure compliance with food hygiene and Health and Safety standards.
In this role, Sous Chef Pastry, is the support of the Chef de Cuisine or Sous Chef in supervising Demi Chefs and the Commis Chefs and in executing the tasks to ensure the highest standards and consistent quality in the daily preparation. Speciality BBQ Chef will assist the Sous Chef in developing new dishes and menus in relation to the BBQ section including: pork, chicken, duck or special meats.
