Job Description Summary
The Machine Operator Wax runs the wax machine to package Mini department products and ensures
that the cheese has proper wax.
Essential Duties and Responsibilities
· It is mandatory to wear the blue powder-less nitrile gloves. Aprons and sleeves are mandatory.
· Transfer racks of cheese from the storage cooler to the Mini Wax production area, utilizing hydraulic hand-truck material handling device.
· Transfer empty cheese racks to the wash room for cleaning and sanitizing.
· Transfer cheese from drying racks to pans.
· Lift and dump cheese pans into wax machine receiving receptacle.
· Weigh required cheese samples.
· Weigh required wax samples.
· Change wax machine plastic ribbons, placing ribbons in holders, as required.
· Thread ribbons through the ribbon guides periodically as needed by crawling and crouching under the machine and reaching up to 4 feet.
· Prepare plastic ribbons by lifting ribbons (approx. 24-48 lbs.) on the table, straighten if necessary, and apply tape to the end of the ribbon.
· Observe cheese wax dipping process, paying attention to wax machine and air pressure, ribbon scissor operation, wax level in upper and lower tanks, and wax temperature.
· Provide required adjustment to maintain proper levels of production.
· Weigh buckets of defective cheese that is discarded.
· Pick up the cheese that falls on the floor and insure that it reaches the trash barrel.
· Turn wax machine off every two hours and spray the machine with chemical solution to eliminate bacteria.
· Dip pans in chemical solution periodically throughout the production day to sanitize pans.
· Change dip pan chlorine water periodically and ensure that it has the proper concentration.
· Keep work area clean and tidy.
· Follows all Good Manufacturing Practices as stated within the policy.
· Follows all Safety Rules and procedures by working safely and ensuring safety of others.
· Follows all food safety procedures.
· Follows environmental protocols as applicable to job to prevent pollution to air, land, or water.
· Follows all sanitation procedures and work instructions.
· Follows all continuous improvement actions and rules and best practices.
· Perform other miscellaneous duties as assigned by management.
Qualifications and Competencies
Minimum education and experience required:
· Requires a High School Diploma or equivalent.
· Ability to understand oral and written instructions relating to Mini operations.
· Ability to function as a team member and contribute to group goals.
