Job Description

·  Assists other members of the kitchen brigade in ensuring that all day to day operational matters are handled on time and guest expectations are met
·  Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
·  Ensures that utensils is stored, prepared and secured hygienically and safely
·  Maintains standards of hygiene and cleanliness in all kitchen and related areas        
·  Ensures that mise-en-place and preparation procedures are correctly followed
·  Supervise the duties of all stewarding employees.
·  Supervise the consumption of all chemicals / cleaning supplies on daily basis.
·  Maintain equipment, such as dishwashers, ovens, and refrigerators in good working condition.
·  Ensure that the stewarding department meets all health and safety regulations.
·  Implement cleaning and sanitation procedures without exception.
·  Coordinate with culinary & service team to ensure smooth operations.
·  Control & document all going out equipment and ensure proper receiving upon return.
·  Prepare reports on daily cleaning checklist for review.

Qualifications

2 Years experience in Stwrding/Culinary.
