Job Description
We are seeking an e xperienced and passionate Head Chef to lead our Kitchen team driving menu innovation, operational excellence, and team development. This is an opportunity to shape a dynamic kitchen, inspire creativity, and elevate an exceptional food menu. This role is ideal for a dynamic leader who thrives in a fast-paced hotel environment and is committed to delivering high-quality dining experiences.
Key Responsibilities:
· Leading and mentoring a high-performing kitchen team, fostering a culture of excellence, collaboration, and professional growth.
· Designing and delivering creative, high-quality menus aligned with the Mercure brand and seasonal produce.
· Ensuring exceptional food standards, from preparation to presentation.
· Overseeing cost control, budgeting, and stock management to maintain profitability and efficiency.
· Implementing stringent food safety and hygiene standards in compliance with WHS regulations.
· Collaborating with hotel leadership, suppliers, and event coordinators to deliver seamless dining experiences.
· Driving a customer and guest-focused culture, ensuring every dish contributes to an outstanding dining experience.
· Oversee kitchen rostering, staff performance, and training to maintain high operational standards.
Qualifications
What We’re Looking For:
· Proven experience as a Head Chef in a busy Hotel environment who likes to be part of the action in the Kitchen.
· A strong background in menu development and cost control, with a keen eye for detail and quality.
· Exceptional leadership skills, with the ability to motivate and mentor a diverse kitchen team.
· A deep understanding of food trends, sustainability, and seasonal produce to drive creativity.
· Strong financial acumen, ensuring efficient stock control, budgeting, rostering and cost management.
· A commitment to excellence in food safety, hygiene, and workplace health & safety standards.
