Job Description
The Role
We are seeking an experienced and passionate Head Chef to lead our culinary team driving menu innovation, operational excellence, and team development. This is an opportunity to shape a dynamic kitchen, inspire creativity, and elevate an exceptional food menu. This role is ideal for a dynamic leader who thrives in a fast-paced hotel environment and is committed to delivering high-quality dining experiences.
Key Responsibilities:
· Designing and delivering creative, high-quality menus aligned with the Mercure brand and seasonal produce.
· Leading and mentoring a high-performing kitchen team , fostering a culture of excellence, collaboration, and professional growth.
· Ensuring exceptional food standards , from preparation to presentation.
· Overseeing cost control, budgeting, and stock management to maintain profitability and efficiency.
· Implementing stringent food safety and hygiene standards in compliance with WHS regulations.
· Collaborating with hotel leadership, suppliers, and event coordinators to deliver seamless dining experiences.
· Driving a customer and guest-focused culture , ensuring every dish contributes to an outstanding dining experience.
· Oversee kitchen rostering, staff performance, and training to maintain high operational standards.
Qualifications
What We’re Looking For:
· Proven experience as a Head Chef in a busy Hotel environment who likes to be part of the action in the Kitchen.
· A strong background in menu development and cost control , with a keen eye for detail and quality.
· Exceptional leadership skills, with the ability to motivate and mentor a diverse kitchen team.
· A deep understanding of food trends, sustainability, and seasonal produce to drive creativity.
· Strong financial acumen, ensuring efficient stock control, budgeting, rostering and cost management .
· A commitment to excellence in food safety, hygiene, and workplace health & safety standards.
