Job Overview

Sanitation and cleanliness of all areas of the dish room, kitchen aisle and dock area. Proper use of dish machine; dishware washing; sorting and storing all clean china, glass and silver.

DUTIES & RESPONSIBILITIES

· 
Neat appearance with proper clean uniform, wearing both a utility hat and hair net and work shoes.

· 
Breakdown of trays; washing of china, glass and silver; and stocking and distributing clean items, using specified procedures.

· 
Actively promote accident prevention by keeping all areas swept clean and dry at all times and using wet floor signs.

SPILLS AND BREAKAGE:

· 
Always clean and mop all spills immediately after they happen. Even if you are busy, it still pays to clean up the mess. Also, use a broom and dust pan to pick up broken glass and china. Do not use your hands.

LIFTING:

· 
Do not lift objects heavier than you can handle or lift too many objects. Instead of straining your back, use a cart and lift properly from the knees, keeping back straight.

HANDLING CHINA AND GLASSWARE:

· 
If china or glass starts to fall, step back. Glassware can shatter and could get in your eyes. Use a firm grip when loading, catching or breaking down these items.

STACKING:

· 
When stacking racks of glassware, make sure the racks are fitted securely on top of one another. Be sure not to stack glasses higher then eye level and be careful that you can see ahead when pushing dish dollies and carts.

BUSTUBS AND TRAYS:

· 
Look - before you reach into bustubs. Sharp knives or broken glass can be found in bustubs or on trays. When grabbing trays from Queen Marys, always use two hands and be careful to balance the tray. Think and keep your eyes open.

STANDARDS AND PROCEDURES

· 
Train about 70 and 30 point food hygiene rule and regulations

· 
Ensures all Marriott SOP's and LSOP's are implemented correctly

· 
Obey to Marriott business ethnic conduct guide book at all times. Ask if you are not sure

· 
Obey to the hotel's established associate handbook

· 
Participate in and promote energy conservation program

TRAINING AND ASSOCIATE RELATIONS

· 
All employees under his jurisdiction exceed Marriott's standard of appearance

· 
Effective communication is maintained through active participation in associate departmental meetings and Food and Beverage meetings

· 
Conduct brain storming session on reduction of breakage/lost for entire hotel. Work with respective departments together to achieve positive impact and results

COST CONTROL & SAFETY

· 
Fully apply and supervise quarterly OE inventories.

· 
Ensures correct techniques of all chemicals are used.

· 
Security of all high value items in all areas at all times

· 
Practice and observe all safety rules and regulations and encourage others to do so. Never block life safety pass ways, never lock emergency doors or block life safety equipment and doors

MEETINGS

· 
Attend daily 15 min training within your department

· 
Attend daily F&B briefings

· 
Implement and attend monthly departmental meeting

· 
Other meetings as required for his/her position as request by Executive Chef/Chief Steward

Other

· 
Performs other duties as assigned to meet the business need

Minimum 1 years experience working in a similar size organization
