Job description

Key tasks

• Prepares recipe cards and training for staff, supervisors and checks duty roster within the outlets.
• Ensures the staff takes days off, annual leave and public holidays as per company policy.
• Ensures the staff attends regular and compulsory training programs.
• Ensures the highest of food quality and products at all times of their respective outlet.
• Supplies food for banquets when required
• Minimizes all wastage by re using or not over ordering of food products and is responsible for their outlet food cost to be in line with the budget.
• Ensures the food is cooked and prepared as per the recipe cards and presented as per the photograph.
• Responsible for the hygiene and cleanliness of their outlet
• Assists other outlets when required
• To have a very good knowledge of all different posts in the kitchen, so the substitution of every Chef de partie or even higher rank is possible.
• To assist, supervise and control the events, the production in general and the à la carte production
• To prepare every courses as well as mis en place at all posts
• To ensure the quality of the prepared courses
• To be responsible for the preparation of the market list
• To be responsible for the daily store order
• To be responsible for a cost-conscious acting at all posts
• The daily control of the cold-storage houses and refrigerators
• To allocate the individual tasks to the Chef de parties
• To clear and take care of the equipment at all post
• To be responsible for the subordinated employees, especially trainees and apprentices
• To implement training for the subordinated employees, trainees and apprentices
• To conduct regular departmental meetings and daily briefings
• To substitute the Head Chef in absence.
