JOB SUMMARY

Exhibits creative baking and decorating talents by personally performing tasks while leading the staff in preparing quality and consistent pastries for all areas. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Leads development and training of team to improve results while maintaining standards. Must ensure sanitation and food standards are achieved.

CANDIDATE PROFILE 

Key Responsibilities:

•    Lead and manage all pastry and bakery production for the hotel’s restaurants, bars, banquets, and room service.
•    Design and develop innovative dessert menus and bakery products that reflect seasonal trends and local flavors while maintaining W’s signature style.
•    Ensure all pastries, breads, and desserts meet the highest standards of taste, presentation, and food safety.
•    Oversee inventory management, ordering, and cost control for pastry and bakery supplies.
•    Train, mentor, and inspire the pastry team, fostering a collaborative and creative work environment.
•    Collaborate closely with the Executive Chef and culinary team to create harmonious menus and special event offerings.
•    Maintain strict compliance with hygiene, safety, and quality standards in the pastry kitchen.
•    Stay updated on current pastry trends, techniques, and equipment to continuously elevate the hotel’s offerings.

Requirements:

•    Proven experience as a Pastry Chef or Pastry & Bakery Chef in luxury hotels or fine dining establishments.
•    Exceptional knowledge of classic and contemporary pastry techniques, artisan bread-making, and dessert plating.
•    Strong leadership and team management skills.
•    Creativity and passion for developing innovative dessert concepts.
•    Excellent organizational and time management abilities.
•    Knowledge of food safety regulations and hygiene standards.
•    Ability to work in a fast-paced, high-volume environment while maintaining attention to detail.
•    Culinary degree or relevant pastry/bakery certifications preferred.
•    Fluency in English; knowledge of Italian is an advantage.
