About the Role

Reporting to the Executive Chef you will be instrumental in supporting the day to day running of the kitchen operation to ensure maximum guest satisfaction. You will be a supportive and coaching leader that guides the culinary team to ensure smooth & effective guest experiences.

Along with this, you will play a vital and hands on role in continuing the success of Lennons Restaurant & Bar and our outdoor terrace venue, Hibiscus Bar & Terrace.

Main Responsibilities

· Along with the Executive Chef & Sous Chef, you will evolve culinary standards specific to our hotel which meets and exceeds the expectation of the hotel’s guests.
· Training and development of all team members, communicate clearly at all times and hold regular meetings with team to share, to inspire, to develop
· Assist the Executive Chef with management of rosters and payroll costs
· Ordering and stock control, considering all times local produce and supporting local suppliers to enhance our local community in our company’s purpose of care.
· In conjunction with Sales & Marketing, plan and execute promotional activities for all F&B Outlets, events and promotions ongoing
· With the Executive Chef, focus together on Hyatt’s Top 20 fundamentals in F&B
· Create a workforce that sees the recruitment, development and retention of Hyatt’s future talent
· Support the Executive Chef & Sous Chef in all HACCP requirements

Requirements

· Relevant experience in a restaurant and or 5 star hotel environment
· Proven experience in leading and developing others
· Relevant degree and or certification in cookery
· Experience in HACCP standards and procedures
