Job description

Waldorf Astoria Seychelles Platte Island is seeking a talented and passionate Chef de Cuisine specializing in Mediterranean cuisine to lead our culinary team. The Chef de Cuisine will be responsible for overseeing the Mediterranean dining experience, ensuring the highest standards of food quality, presentation, and guest satisfaction. The ideal candidate will have a deep understanding of Mediterranean flavors, culinary techniques, and a passion for creating innovative and memorable dining experiences.

Key Responsibilities:

  • Menu Development: Create and maintain an authentic Mediterranean menu that showcases the vibrant flavors and ingredients of the region, while incorporating innovative and modern techniques.
  • Team Leadership: Lead, mentor, and develop the kitchen team, fostering a positive and productive work environment.
  • Quality Control: Ensure the highest standards of food quality, taste, and presentation are consistently maintained.
  • Inventory Management: Oversee kitchen inventory, including ordering, receiving, and managing stock levels to minimize waste and control costs.
  • Health & Safety: Ensure all kitchen operations comply with health and safety regulations, maintaining a clean and safe work environment.
  • Collaboration: Work closely with the F&B Manager and other department heads to ensure seamless service and guest satisfaction.
  • Guest Interaction: Engage with guests to understand their preferences and gather feedback, enhancing the dining experience.

Qualifications:

  • Proven experience as a Chef de Cuisine or similar role, with a focus on Mediterranean cuisine.
  • Strong leadership skills with the ability to manage and inspire a team.
  • Extensive knowledge of Mediterranean ingredients, flavors, and cooking techniques.
  • Excellent communication and interpersonal skills.
  • Ability to work in a fast-paced, high-pressure environment.
  • A creative and innovative approach to menu design and culinary presentation.
  • Formal culinary training or equivalent experience.
