Executive Chef

We are seeking an experienced Chef with an exceptional level of energy and dedication to culinary experiences. The Executive Chef oversees an number of kitchens with a staffing level ranging from 80 to 100 Culinarians seasonally and 50 to 80 Stewarding employees seasonally. The opening of the Mount Temple Wing has position The Fairmont Chateau Lake Louise in competition for business in the luxury group market, as well as maintaining exceptional service standards for tour groups and individual travellers alike. This position requires passion for the preparation and presentation of tantalizing meals and a strong talent in leadership, operations and business results.

What you will be doing:   

·  Oversee the operation of all restaurant kitchens and main kitchen operations including, Pastries, Garde Mange, Banquets, Staff Dining, and four restaurant Kitchens (supporting 8 dining outlets)
·  Develop and lead the Executive Sous Chef and seven Sous Chefs in various kitchen operations
·  Manage a Stewarding Team including the Chief Steward
·  Financial responsibilities include: food cost controls, managing all departmental operation expenses, managing food waste in all kitchens, including staff dining, payroll controls- including: scheduling to business levels, productivity is maximized and recruitment procedures are effective
·  Develop and provide menu items according to specific client and event needs or custom orders that support dining selection in restaurants
·  Provide insight into food revenue opportunities for each dining outlet.
·  Maintain standards of food quality and operation according to Fairmont Hotels & Resorts guidelines
·  Maintain par stock levels of food items, based on demand and business levels – maintain relationship with food stores that build communication on food rotation to minimize loss
·  Ensure all aspects of safe food handling and health board requirements are in place and practiced
·  Establish work environment that focuses on health and safety – the prevention of injuries is a key focus
·  Liaise with department’s leaders in F&B Division and in Hotel to ensure effective work relationships
·  Ensure that hotel targets are met and annual departmental goals are successfully achieved
·  Maintain effective and timely performance management practices, including – training, performance reviews, goal-setting, recognition, etc.
·  Commit to hotel-driven initiatives and committees by representing or appointing representatives from Stewarding and Kitchens to participate
·  Adhere to all hotel environmental policies and initiatives
·  Carry out any other tasks as assigned

 

Your experience and skills include:

·  Minimum 2 years of experience at the Executive Sous Chef level in a large hotel and kitchen environment
·  Experience with large budgets, caring operations and multiple kitchens at one time
·  Enjoys working with and assisting new culinarians become professionals in the field
·  Valid trade certifications must be demonstrated
·  Able to work in a fast paced environment with interruptions and a variety of demands.
·  Able to manage constant change and challenging situations
·  Must be detail oriented, highly organized, creative, innovative and numerically inclined
·  Proven ability to effectively interact with senior leadership, peers and employees
·  Aware of wellness and safety practices that protect self and co-workers
·  Computer experience with Excel and MS Word an asset, particularly spreadsheets/tracking systems
·  Working Knowledge of ADACO or similar purchasing system an asset
·  Self‑motivated, with the ability to make effective decisions
·  Demonstrates initiative, and the ability to work with minimal supervision
·  Ability to maintain high service levels under pressure
·  Ability to consistently stand and walk through out shift
